Looked up nitrates in BBQ, found those articles.
Nitrates are found more in processed foods as preservatives, hot dogs and sausages for instance. But, not found or less found in raw/fresh/organic meats.
The second one also mentions MSG and people can be sensitive to those as well as nitrates.
I'm glad I don't get headaches with wine or BBQ. That would suck. 8[
